2nd Commis – Luxury Mega Yacht

Responsibilities
Strictly adheres to all recipes, methods and instructions from supervisor; Maintains an organized and efficient flow of production, with regards to changes in forecasts and menus; Assists the Assistant Chef de Partie or Sous Chef in maintaining standards in the galley; Consistently checks temperatures in foods and follows proper procedures regarding chilling, re-heating, and holding food; Checks station prior to leaving to ensure cleanliness, proper disposal/removal of food, and proper storing and labeling; Adhere to all SOP’s and participates in the ongoing creation of SOPs relevant to their area of responsibility; Ensure that all areas are maintained in accordance with Company policy, Public Health (HACCP), SMS, safety and environmental regulations;
Hiring Requirements
Minimum of 1-year culinary experience on an ultra-luxury Cruise Ship, Private Club, Boutique Hotel, ultra-luxury Hotel or Resort; Knowledge of all basic cooking techniques and skills including:; Knife skills, basic cuts, all cooking methods; Knowledge of basic equipment including steamer, fryer, kettles, robocoup; Basic understanding of herbs, spices, and various flavoring ingredients;
